THE IRISH AMERICAN MOM
The food of Mairead's Dublin childhood was always fresh, plentiful and tasty. She has tweaked her mother's traditional Irish recipes to recreate the dishes she loved as a young girl, using American ingredients.
Mairead came to New York, over twenty years ago, to work as a physical therapist. Married to a Donegal man, she is now the proud mother of four and lives in Kentucky. When a patient called her “Marmalade”, she knew she needed to find a helpful way for Americans to say her name. 'Mairead' is Irish for Margaret and is pronounced as if it rhymes with 'parade'.
In her blog, Irish American Mom, she recounts her personal evolution from Irish girl to American mom, discusses lessons for tourists to Ireland, writes stories about raising triplets, and shares her knowledge of simple, but scrumptious Irish cooking.
Mairead believes Irish Americans have an unjustified, inferiority complex about the traditional recipes of their forefathers. Anyone who has tasted a Guinness beef stew, or a roast leg of lamb, can testify to the glories of Irish cooking. Mairead makes no apologies for Irish food, and believes that together we can bring Irish American food to a new level of excellence.
Potato And Leek Soup Potato and leek soup is a
traditional Irish comfort food. Served with buttered brown soda bread, it is
a delicious warm treat for fall.
Irish Sausage Rolls
Sausage rolls are very popular in Ireland, served as party appetizers or
sold in bakeries as take-away food. Sausage rolls made using American
sausage meat lack the distinctive flavoring of the Irish or English variety.
To recreate the flavor of my childhood I have come up with a recipe for
sausage filling, with seasonings that mimic the original taste of Irish
sausages.

Christmas
An Irish Christmas dinner just would not feel like Christmas without plum pudding for dessert. I have taken my Mom’s old recipe, and given it an American spin

Vol-au-vents are French, not Irish, I hear you say. I am officially adopting them as an Irish Christmas appetizer. Whenever family and friends came over for Christmas get-togethers, my mom made these delicious snacks. Chicken and Mushroom Vol-Au-Vents
