THE IRISH AMERICAN MOM

 
 The food of Mairead's Dublin childhood was always fresh, plentiful and tasty. She has tweaked her mother's traditional Irish recipes to recreate the dishes she loved as a young girl, using American ingredients.

Mairead came to New York, over twenty years ago, to work as a physical therapist. Married to a Donegal man, she is now the proud mother of four and lives in Kentucky. When a patient called her “Marmalade”, she knew she needed to find a helpful way for Americans to say her name. 'Mairead' is Irish for Margaret and is pronounced as if it rhymes with 'parade'.

In her blog, Irish American Mom, she recounts her personal evolution from Irish girl to American mom, discusses lessons for tourists to Ireland, writes stories about raising triplets, and shares her knowledge of simple, but scrumptious Irish cooking.

Mairead believes Irish Americans have an unjustified, inferiority complex about the traditional recipes of their forefathers. Anyone who has tasted a Guinness beef stew, or a roast leg of lamb, can testify to the glories of Irish cooking. Mairead makes no apologies for Irish food, and believes that together we can bring Irish American food to a new level of excellence.
